Chocolate & Coconut Rocky Roads

These gluten and egg free rocky roads are delicious. They are a perfect treat to give the children or to have on the weekend when you are craving something sweet. Serves 6

Ingredients:

  • 1 scoop or sachet of Specially For You Chocolate & Coconut
  • 125g dairy free butter
  • 300g vegan dark chocolate
  • 3 tbsp. maple syrup
  • 200g gluten free/ vegan digestive biscuits
  • 100g vegan mini marshmallows

Method:

Line a 28cm x 18cm baking tin with grease proof paper. Heat the butter, chocolate and maple syrup in a pan on a gentle heat and stir until melted. Remove from heat and set aside

Place the biscuits in a plastic bags and bang with a rolling pin but make sure you don’t make it all crumbs and you have biscuit pieces in it. With a large spoon fold the biscuit and marshmallows into the melted chocolate

Tip the mixture into the baking tin. Put in the fridge for 2 hours or leave overnight. Cut up into slices and serve.

Dietary requirements: Gluten free, Egg free, contains Soya.
